Easiest Small Batch Gluten Free Waffle Recipe

When I say “gluten free waffles for two” I actually mean, waffles for me! (OK, waffles for me and someone else – if I’m not too hungry!) This recipe makes three waffles, so they’re just right to split with a friend or kid, or you can enjoy one or two now and save the rest for later. I love making these small batch gluten free waffles for myself when I’m making whole wheat waffles for the rest of the family and don’t want to make a big batch gluten free waffles. The simplest ingredients including oat flour, milk, butter, and egg, plus a few more pantry staples make this recipe a snap.

Why You’ll Love These Gluten Free Waffles

This is a no-frills, comes-together-in-minute recipe for gluten free waffles that would be perfect to make for mom on Mother’s Day, or on any day of the year you want just a few waffles! Bonus: a small batch means less time hanging out over the waffle iron. I love these and I know you will too.

  • Totally gluten free. Yep, these are naturally gluten free and totally delicious. Similar to my oat flour waffles recipe, you need just oat flour to make these into gluten free waffles. The rest of the ingredients are also gluten free.
  • Small batch. Don’t you love the idea of small batch? I don’t mind making a lot of waffles but when it’s just me I don’t want a ton of leftovers. This recipe makes enough for 3 hearty waffles – you can split them two ways or save one for the next day’s breakfast or snack.
  • Not sweet. Some waffle recipes call for sugar, but I prefer to keep mine sugar-free so I can have a generous hand with the maple syrup! I love that these waffles are not overly sweet, though you can add a bit of sugar if you prefer.

Ingredients Needed

Here’s a look at the six ingredients in this recipe for gluten free waffles for two. The full ingredient amounts are included in the recipe card at the end of this post.

  • Oat flour – Whole grain, naturally gluten free flour is the only flour needed in these waffles. You can make your own oat flour or pick up a package at the store. Use certified gluten free oats or oat flour if needed.
  • Baking powder Just enough baking powder is included in the batter to give the waffles a bit of lift.
  • Salt I always use fine sea salt in my recipes! You need just a pinch of salt in these waffles.
  • Butter – Salted or unsalted butter is fine.
  • Egg – You need just 1 large egg for this recipe.
  • Milk – I use whole milk and 2% milk interchangeably in these waffles.

How to Make Small Batch Gluten Free Waffles

If you’ve made waffles, you’ll be familiar with the method outlined below. Basically, you’ll whisk, stir, and let the waffle iron work its magic. Check the recipe card lower down for the detailed instructions.

  • Make dry mix: Whisk together the flour, baking powder, and salt.
  • Make wet mix: In a large measuring cup, whisk together the butter, egg, and milk.
  • Combine: Add the wet mix to the flour mix.
  • Rest: Let the batter rest for 10 minutes.
  • Cook: Heat a waffle iron and cook the waffles.

A Few Waffle-Making Tips

Gluten free waffles are so similar to regular waffles, but the main point to remember is: rest the batter! Oat flour, like all gluten free flour, needs a hydration period so that it soaks up some of the liquid in the batter. You’ll notice that the waffle batter magically thickens up after several minutes. I recommend at least 10 minutes of hydration time before cooking the waffles. A few other tips –

  • Heat the iron thoroughly – This seems obvious but make sure to get your waffle iron nice and hot before you cook the waffles, say about 10 minutes of heating time. Oh, and clean it thoroughly before you turn it on.
  • Warm the milk – You’ve melted the butter, now warm the milk a bit so that the butter doesn’t solidify when you combine them. About 15 seconds in the microwave should do it.
  • Add a little sugar – For dessert waffles, or if you just have a sweeter tooth, add 2 teaspoons of granulated sugar or maple syrup to the batter.
  • Cook on high heat – I’ve found that every single waffle recipe I make turns out the best when I set the temperature on the waffle iron to the highest setting. Don’t worry – your waffles won’t burn! They will however turn out beautifully, deliciously crisp, and well-baked.
  • Follow the steam – When the waffle iron’s light turns green, don’t immediately pull the waffle. If your iron is still steaming, watch it. When there’s no more steam coming out you can safely consider your waffle fully cooked. It’s OK to let the waffle cook a bit longer – this will result in crisper waffles.

Storing Your Gluten Free Waffles

Even with a small batch gluten free waffle recipe, you may have leftovers (lucky you!). You can refrigerate or freeze them like so:

  • Fridge – Place waffles in a sealable bag or airtight container with a piece of parchment paper separating each one so that they don’t stick, and store them in the fridge for up to 5 days.
  • Freezer – Store waffles with a piece of parchment in between each one in a freezer-safe, sealable bag in the freezer for up to 3 months.
  • To Reheat – You can pop waffles straight from the fridge or freezer into a toaster or toaster oven and heat until lightly crisp.
