Vegetarian Recipes
I've been a vegetarian for almost 30 years now (!) and cook almost exclusively vegetarian (well, I do for myself but I'll make meat occasionally for the rest of my family). I've collected some of my tried-and-true vegetarian recipes and posted them to this site over the years, from soups to salads to souffles to roasted vegetables and so much more. I hope you love these as much as I do!
To get you started, here are a few of my favorite vegetarian meals that are in my regular kitchen rotation:
- Gluten Free Spinach Souffle - a light and fluffy souffle that's easily made gluten free and is packed with salty cheese, fresh eggs, and fresh spinach.
- Asparagus Soup - I make this creamy, delicate soup throughout spring. It's vegan as well as vegetarian and needs just a handful of ingredients to make.
- Coconut Quinoa with Broccoli and Cauliflower - loaded with vegetables like roasted cauliflower and crisp sauteed broccoli, you'll love serving this vegetarian main with a side of caramelized sweet potatoes or sauteed tofu.
