Still summer here, getting just the tiniest bit ready for fall, but soaking up the hot days with trips to the beach and loads of swimming and making, on near-constant repeat, my new obsession: frozen fruit blended with Greek yogurt. It’s just the thing for humid evenings when I might brave the mosquitoes for a wee swing in the hammock (but more likely will lounge on the couch in front of the sliding glass doors). The best part about my bowl of icy deliciousness is that it’s totally sugar-free except for the fruit — thus being both refreshing and good for me.
I’ve had my moments with banana “nice” cream but to be honest I don’t know if I’ll ever be able to fully love frozen bananas. Bananas in smoothies are one thing but so much banana-ness even cut with a bit of chocolate or peanut butter … well, it’s not my favorite. Greek yogurt, on the other hand, is one of my favorite things as well as giving me calcium and protein. Whirled with fruit into a sort of ice cream/yogurt/sorbet-esque swirl has been my go-to post holiday treat.
I typically use frozen raspberries or strawberries or a combination but peaches are in season – and cheap! – right now. I’ve been picking up a lot at the grocery store and decided to incorporate them into this recipe. Little E loved it (evidence above). Nectarines and blueberries are next on my to-try list. But really you can’t go wrong with whatever fruit strikes your fancy. Just be warned that your frozen yogurt will be a bit tart, which I love, since there’s no added sugar. If you need a little something, a drizzle of honey or maple syrup should do the trick.
I use the “light” Greek style yogurt in this recipe, but I’m sure full-fat would just as nice if richer. A decent blender or food processor is helpful here — Vitamix, I hope we meet one day! — but I use my Woolworth’s stick blender with good results. I do have to let the frozen fruit soften just slightly to help with the blending. Makes two servings. 2 cups frozen fruit of choice — raspberries, blueberries, strawberries, cherries, stone fruit, etc. Place fruit and yogurt in a blender or food processor and process until very smooth and creamy. It will have the consistency of soft serve ice cream. Note that this is best made and eaten immediately rather than making a larger batch and freezing for later.

This sounds very delicious…love the frozen fruit part…..would you freeze nectarines also? Another healthy alternative to sugar and fat.
