1large zucchinior about 1 pound, or more as needed
1cupdark brown sugar sugar
3large eggs
½cupextra-virgin olive oil
½cupunsweetened applesauce
½cupwhole or low-fat Greek yogurt
3oz.unsweetened baking chocolate
1cupsemisweet chocolate chips
Instructions
Heat oven to 325℉. Oil and flour the bottom and sides of a nonstick tube pan. In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt in a large bowl. Grate the zucchini and set aside.
In another large bowl, whisk together the sugar and eggs until light in color and thickened, about 2 minutes. Gradually add oil in a steady stream while whisking. Continue to whisk until batter is thick. Whisk in the applesauce and yogurt until fully incorporated.
Melt the baking chocolate and add it to the wet ingredients. Add the dry ingredients and mix until combined. Add the grated zucchini and mix until incorporated. Add chocolate chips and stir again. Pour batter into prepared pan and spread evenly.
Place pan on a baking sheet and bake until a skewer comes out clean in the middle, about an hour.
Remove from oven and let cool in pan 10 minutes then turn out onto a rack to cool completely.
