A loose recipe for fried brown rice with vegetables that can be adapted to whatever you have in the fridge. Naturally gluten-free, vegetarian, and delicious!
1 ½cupscooked brown rice,long or short grain brown rice
2tablespoonsolive oil,or butter
4largeeggs
½cupcheese,I use sharp cheddar cheese
2cupsbaby spinach
1cupfrozen peas
1cupshiitake mushrooms,sliced
Salt and pepper.,to taste
Instructions
In a large frying pan heat the olive oil or butter and crack in the eggs. Scramble them as you cook, then add the rice and vegetables. Add cheese and salt and pepper and cook until the cheese is melting and the rice and veggies are hot.
