A loose recipe for fried brown rice with vegetables that can be adapted to whatever you have in the fridge. Naturally gluten-free, vegetarian, and delicious!

Ingredients
  

  • 1 ½ cups cooked brown rice, long or short grain brown rice
  • 2 tablespoons olive oil, or butter
  • 4 large eggs
  • ½ cup cheese, I use sharp cheddar cheese
  • 2 cups baby spinach
  • 1 cup frozen peas
  • 1 cup shiitake mushrooms, sliced
  • Salt and pepper., to taste

Instructions
 

  • In a large frying pan heat the olive oil or butter and crack in the eggs. Scramble them as you cook, then add the rice and vegetables. Add cheese and salt and pepper and cook until the cheese is melting and the rice and veggies are hot.
