Ingredients

  • 3 cups rolled oats, gluten-free if needed
  • 1 cup raw almonds
  • ¼ cup pistachio nut meats
  • ½ cup raw pumpkin seeds
  • ¼ cup chia seeds
  • ¼ cup flax seeds
  • 1 teaspoon fine grain sea salt
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground cinnamon
  • ½ cup extra virgin olive oil
  • ¼ cup honey
  • ¼ cup maple syrup
  • ¼ cup dried tart cherries
  • ¼ cup dried blueberries
  • ¼ cup dried cranberries

Instructions

  • Heat oven to 325℉ and line a large baking sheet with parchment paper.
  • In a large bowl, combine the almonds, pumpkin seeds, chia and flax seeds, salt, ground cardamom, and cinnamon. Stir well to combine. Pour in the olive oil, honey, and maple syrup, and stir well to coat the dry ingredients.
  • Spread the granola out in an even layer on the baking sheet. Place in the oven and bake for 30 minutes, until fragrant and golden brown. Stir granola every 15 minutes to make sure it bakes evenly.
  • Remove from oven and let cool. Granola will firm as it cools. Then stir in the dried fruit.
  • Granola keeps in an air-tight container in the cupboard for 2 weeks or in the freezer (fruit stored separately) for a few months.
