Strawberry Cocktail

This strawberry cocktail can be served with or without gin, and is gorgeously colored and flavored by loads of fresh strawberries! Enjoy this as a refreshing summer mock/cocktail spiked with fresh mint or basil from the garden.

Ingredients
  

  • 1 pint strawberries , tops cup off and halved
  • 1 tablespoon honey or sugar
  • 1 lime , juiced
  • Seltzer or sparkling water , I used lime seltzer, and left out the lime juice
  • 8 fresh mint leaves , roughly torn
  • Gin

Instructions
 

  • Purée strawberries and honey or sugar in a blender until it's as liquefied as possible. Add a splash of water if needed and continue to and purée until very smooth and thick.
  • Divide the purée between glasses, add one shot of gin to each, if using, and stir to combine. Add ice to glasses then top each with seltzer and a few of the mint leaves. If not using gin, you may up both the quantity of the strawberry mixture and the seltzer or sparkling water.
