Easy halloumi cheese salad features salty, squeaky cheese, cherry tomatoes, cucumber, and quinoa. Perfect for an easy lunch or even dinner.

Ingredients
  

  • 1 cup cooked quinoa
  • 1 cucumber , peeled and cut into 1/4-inch pieces
  • ½ teaspoon olive oil
  • ½ teaspoon balsamic vinegar
  • 1 basket cherry tomatoes , washed and halved
  • ½ block halloumi , cut into rough ½-inch pieces
  • Freshly ground pepper

Instructions
 

  • Place quinoa and vegetables in a bowl and drizzle with the olive oil and balsamic. Lightly toss to combine.
  • In a frying pan over medium heat, fry the halloumi pieces, turning and stirring to fry both sides evenly. Remove from heat.
  • Divide quinoa and vegetables between two salad plates. Top with halloumi and freshly ground pepper.
