Simple Apple Cake

A sweet and simple apple cake inspired by a Smith's Island recipe. This tender cake is fragrant with apples and cinnamon, and absolutely perfect for the glut of fruit that floods farmers' markets every fall.

Ingredients
  

  • 2 cups granulated sugar
  • 4 eggs, lightly beaten
  • 1 cup vegetable oil
  • cup orange juice, I squeezed 1 large orange
  • 2 teaspoons pure vanilla extract
  • ½ teaspoons rum, brandy, or almond extract
  • ½ teaspoon fine sea salt
  • 3 teaspoons baking powder
  • 2 apples
  • 3 teaspoons ground cinnamon
  • 6 tablespoons granulated sugar
  • chopped nuts optional (I scattered sliced almonds on top)

Instructions
 

  • Grease a tube pan and preheat the oven to 350℉
  • In a large bowl, whisk together the batter ingredients and let it sit while you peel and cut up the apples. Mix the apples with cinnamon and sugar.
  • Add batter and apples alternately, begin with batter and end with apples (batter-apples-batter-apples). Sprinkle nuts across the top of the final layer of apples if using.
  • Bake 1 ¼– 1 ½ hours, until a tester inserted comes out clean. Remove from oven and cool in pan for 15 minutes, then turn out onto a rack to cool completely. May serve slightly warm or at room temperature.
