Apple Bread Recipe

A simple apple bread recipe that makes the most of apple season. Tuck home-grown apples into this sturdy loaf if you can, otherwise, stock up at the farmer's market or make an apple-picking trip.

Ingredients
 
 

  • 1 ½ cups diced apples , use your choice of apples
  • ½ cup granulated sugar
  • 2 cups whole wheat pastry flour
  • cup packed light or dark brown sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup whole milk
  • ½ cup unsalted butter , melted and cooled
  • 1 teaspoon pure vanilla extract
  • 2 large eggs , lightly beaten

Instructions
 

  • Preheat oven to 350°F. Lightly grease one loaf pan.
  • Place apples and granulated sugar in a medium bowl; toss to coat and let stand 10 minutes.
  • In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.
  • Stir milk, melted butter, vanilla, and eggs into apple mixture then add to flour mixture, stirring until just combined. Divide batter evenly among prepared pan/s.
  • Place in the oven and bake until a wooden pick inserted in the center of a loaf comes out clean, 35-40 minutes. Cool in pan for 10 minutes then turn out onto a wire rack to cool completely.
