1medium-small red or yellow onion, peeled and chopped
2clovesgarlic, minced
1medium head green cabbage, cored and finely shredded
1cupcooked brown rice,long or short grain is fine
4-5cups water or vegetable broth, or more as needed
Instructions
In a soup pot, heat the oil over medium heat. Add the onion and garlic and cook until very lightly browned, about 4 minutes. Add the cabbage and cook until softened, about 6 minutes.
Add the water or broth and cook over moderately low heat until the cabbage is tender, about 10 minutes.
Season with salt and pepper, stir in the rice and serve.
